Grass-fed ghee is an excellent (and delicious!) source of conjugated linoleic acid with an ideal omega 3:6 ratio of approximately 3:1. Ghee is prepared by simmering unsalted butter until all the water evaporates and the milk solids settle at the bottom. The remaining butter oil is very heat-stable with a high smoke point, making it an excellent choice for frying and sautéing.
