Berry & Chia Jam on Toast

We’ve all heard about breakfast being the most important meal of the day, but with kids to get organise and a day to get on with, it can be a struggle to ensure it is delicious and nutritious. This easy to make Berry & Chai Jam on toast is quick to make and can be kept in the fridge for up to a month - breakfast sorted.

Incorporating the goodness of gelatin and all of the beautiful flavours and colour of berries, this GPA Wholefoods recipe will ensure everyone starts their day right. And, you’ll know they are getting all the benefits of gelatin.

Thankfully Nourished New Zealand Gelatin

Berry & Chia Jam on Toast

Serves: 2 Prep: 5 mins (+1 hour in fridge) Cooking time: 5 mins + 5 mins soaking

2 tbs water
2 tsp gelatin
500g packet frozen mixed berries
12 drops monk fruit concentrate
2 tsp white chia seeds

To serve:
100g smooth ricotta
sour dough toast

Place water in a small bowl and sprinkle over the gelatin. Leave to soften for 5 minutes.

Place berries in a small saucepan over medium heat. Cook, stirring, for 3-4 minutes or until berries are soft and releasing juice. Stir in gelatin until it is dissolves. Add monk fruit concentrate and chia seeds. Spoon into a glass jar and refrigerate for 1 hour or until firm.

To serve: Spread ricotta onto toast and top with spoonfuls of jam.

Note: Store jam in the fridge for up to 1 month.
